I kept myself busy today I made pickled beets and I tried a new recipe called Sweet Pumpkin Butter.Everyone in this house adored anything pumpkin so I thought I would give it a try. Here is the recipe
Sweet Pumpkin Butter
1 (15 0z) can of 100% pure pumpkin (dont use the pumpkin pie mix)
1/2 cup apple cider (I used apple juice)
1 cup granulated sugar
1 tablespoon pure maple syrup
1/2 tsp ground ginger
1/4 tsp nutmeg
1/4 tsp cloves( I barely used 1/8th because I am not fond of it)
1 teaspoon ground cinnamon
Mix all ingredients in a large saucepan
Bring mixture to a full boil( this wont happen because it tends to plop in the saucepan )
So you must stir and stir...
Reduce heat and continue cooking 10-15 min until thick ,it says stir fequently I stired almost continuously
Remove from heat and let cool then pour into clean jars and refrigerate for up to 2 months in fridge.
It sounds good smells wonderful I will let you know tomorrow when we have it on our morning toast!
You know its fall when you get a craving for something with pumpkin it it!

I've never had pumpkin butter but I love apple butter. Bet it's good.

Diane, It will be fabulous! Like Brenda, I'd only had apple butter, but a few years ago, I got some pumpkin butter a lady sold at the Oklahoma State Fair, and it was to die for! Put it on hot bisquits, and that's all I wanted to eat!
Oh my but that looks yummy. I could think of a million uses for it. Like you, I would also cut down on the cloves as they are a little strong for me. Thanks for posting the recipe.

I copied this recipe so I can try it.
I want to mention that I make several types of fruit butters but cook them in the oven in a flat pan. This way I am not tied to the stove stirring the whole time and it never burns. I just stir it occassionally until it's thick enough to jar.
