Breakfast is Blueberry Banana Muffins !!


How about having some breakfast with me?? I felt like having something else besides 12 grain toast ,so I whipped up a bunch of blueberry banana muffins and I EVEN made fresh ground coffee,so come on over sit a while, we will chat over some breaky !!



Get that coffee ground fresh and make the coffee quick ,
I need it to wake up and do some baking!!
Blueberry Banana Muffin Batter !!

Ready for the oven!!

First Batch hot from the oven !!

Second batch hot from the oven !


These muffins are the lightest you will ever eat,I don't like a heavy muffin. This recipe is originally my MIL's, she used butter but I found it made them greasy so I use Crisco instead works out a lot better.
Here is the recipe.

Banana Muffins

1/2 cup crisco
1 cup white sugar
Beat this together till fluffy
Add 2 large eggs
Beat this till light in texture
Add 3 med.mashed banana's ( I use ripe ones)
Sift and measure 1 and 1/2 cup (((Cake and Pastry Flour))) I can't stress using that flour enough do NOT use all purpose for this, they will be heavy.
And one tsp baking soda

Opt* I add 1 cup of blueberries mixed with a few tablespoons of flour
Or add some cinnamon about a tsp

Bake at 350% for 20 min, or till golden.

Too yummy! The muffins look delish and thank your for the recipe...I'm copying it for sure. Cake flour must be the secret for fluffy muffins...I think I'll try it in the my nest batch of banana nut muffins...worth a try. Hugs, Linda

Would be so neat if you could dehydrate the blueberries and bag up the mix--so all we would add is the eggs and liquid stuff(:) might get rich, from at least us Blooger pals~~!!

Banana Muffins and real coffee!!! Oh but... What "pray-tell" is real coffee??? -grin- Can you tell, I've been a long time now, on decaf? But sometimes, I sneak a bit of real instant in with my decaf instant. -shushhhhhhhhhh- Don't tell anyone. :-)

You remember the original 'Secret Agent'! And your fav singer as a teen, was Petula Clark! Since I'm older than you, she was a fav of mine, more in my young married time.

My husband and I went to see her, way back then, at our outdoor summer music place... SPAC. And she did a great show. And she sat and sat and sat after, signing autographs. That made her very, very special in our eyes.

Sooooo not like the usual stars who perform, and then are whisked away from the stage door {and from the eyes of fans}, almost before the last clapping stops.

So happy to hear she is still performing. What an all round doll she was. :-)

I just bought a new big bag of flour today and noted the prices have virtually doubled since just before Christmas but still a lot healthier, tastier and less expensive than purchasing 'store bought' :o)

Thanks for stopping by and commenting on my blog...it meant I could find YOU and your delightful blog :0) This post with it's scrumptious muffin recipe makes me wish I lived a tad farther north than in Arizona so I could sit down with you and enjoy one and a delicious cup of coffee! Confession: I am a coffeeholic, too!! The richer and darker the better.

I'm sorry to hear that you lost your mother so recently. How good that you have a loving family to support you as your heart begins to gently heal.

I read a few posts back and saw those ENORMOUS eggs that you want to work on! I'll have to google Pysanky work to see what that craft is.
